Roasted Vegetables

This is a healthy side dish to any main meal such as hamburgers or sandwiches!

Roasted Vegetables

  • 6 large Zucchinis
  • 6 large Carrots
  • Pinch of Salt
  • Pinch of Pepper
  • Any other seasonings you prefer-paprika, red pepper, cayenne pepper, cumin, rosemary, sage
  • Olive oil

  1. Preheat oven to 220 C
  2. Cut zucchini and carrots into 3 inch sticks
  3. Spread small amount of olive oil on bottom of baking pan
  4. Place vegetables in a mixing bowl
  5. Cover with salt & pepper and your choice of other seasonings
  6. Toss vegetables with seasonings and ½ tsp of olive oil
  7. Spread onto pan and place in oven until golden brown
