This is an incredibly simple chicken casserole that can be dressed up more as needed. I’ve used crushed Ritz crackers mixed with melted butter as a unique and simple layer under the cheese. It adds some great texture and saltiness while maintaining the traditional comfort food appeal.

I went to a restaurant once when I was first being introduced to seafood (I was a late bloomer), and took a gamble with the shrimp. The server assured me that these would open my world…sure enough, they did. This isn’t the exact recipe, but it’s what I was able to piece together after some intense searching. They are great at any get together and really simple to make. It’s quickly becoming a new family tradition!
